Wet mixture ingredients

  • 2 eggs
  • 2 tsp Garlic powder
  • 1 Tbsp Adobo All- purpose seasoning
  • ½ tsp salt
  • ½ tsp Black pepper
  • 2 tsp All- purpose seasoning
  • 1 tsp Onion powder

Dry batter ingredients

  • 1 cup of Flour
  • ¼ of corn starch
  • ½ Panko bread crumbs
  • 2 Tbsp Garlic powder
  • 2 Tbsp Adobo all- purpose seasoning
  • ½ tsp salt
  • ½ tsp Pepper
  • 1 Tbsp seasoning salt
  • 1 Tbsp Onion powder

Sweet Cilantro Mayo Dipping Sauce ingredients

  • ¼ cup of Mayo
  • 2 Tbsp of Honey
  • 1 clove of garlic
  • ¼ cup of chopped fresh cilantro
  • ½ tsp of black pepper
  • 3 Tbsp lemon juice
  • Pinch of salt

Let’s start by with making our cilantro mayo dipping sauce.  In a food processor add the mayo, honey, garlic, cilantro, black pepper, salt and lemon juice and blend until smooth. Once completely smooth and creamy place your cilantro mayo dipping sauce in a serving bowl and place it in the fridge for later use or set it aside at room temperature right before using.

It is also very important to make sure that you clean/wash your shrimp. The shrimp that I used was already deveined and easy peel. Place the shrimp in a bowl, filling it with water, moving the shrimp in a clockwise motion and then throwing off the water. I recommend that you do this a few times with cool water to wash off any debris.  You can peel your shrimp before or after you’ve washed it, this is entirely up to you.

Tip: leave the tails of the shrimp on for easier handling (Ie. Dredging, frying, eating)

If your shrimp is not already deveined you want to do this first before cleaning it with water.

Optional: Add lemon juice or vinegar to the cool water when cleaning/ washing the shrimp

For the wet mixture, add to a medium size bowl eggs, garlic powder, adobo all- purpose seasoning, salt , black pepper,  seasoning salt, onion powder and the shrimp. Combine well folding in all of the ingredients gently with tongs or your hands and then set it aside to marinate for 15-20 min.

While the shrimp is marinating we can work on making the dry batter that will coat the shrimp.

For the dry batter, in a bowl add all-purpose flour, corn starch, panko bread crumbs, garlic powder, adobo all- purpose seasoning,  salt,  pepper, seasoning salt,  onion powder and set aside until ready to dredge or coat the shrimp.

After both mixtures have been made, this is a good time to preheat your oil to 350 Degrees Fahrenheit

Option 1: After your shrimp has marinated in the wet mixture, coat each shrimp in dry batter by dipping them in the dry batter one at a time until fully coated and place in the hot oil immediately.

Option 2: After your shrimp has marinated in the wet mixture, coat each shrimp in dry mixture by dipping them into the dry batter one at a time and lay them aside to rest on a silicone mat or cutting board until all have been coated.  Some of your shrimp may need to be re coated in your dry mixture because as they rest some of their dry batter coating may get absorbed.

Tip! : Do not over crowd your frying pan while frying your shrimp as this will interrupt the shrimp from getting golden brown in the appropriate time and can cause the shrimp to overcook.

I recommend frying four of the extra-large jumbo shrimp at a time.

Fry each side of your shrimp until light golden brown or for 1-2 minutes on each side for a total of 3-4 minutes per shrimp.

Remember shrimp do not take long to cook, but these shrimp are very large so be sure to give them and extra 30 seconds if you think that they have not gotten golden brown enough.

Your shrimp will also continue to brown slightly after removing from the hot oil.

Once fried until golden brown remove the shrimp from the hot oil and place on paper towels to sop up some of the excess oil.

After the shrimp have cooled, sprinkle them with green onion on top or finely chopped red chilli for some spicy heat and serve with the cilantro mayo and enjoy.

Here are some side dish options you can enjoy this dish with:

 White/brown rice,

Fried rice,

Fries,

Chow mien noodles,

Ramen noodles or

Thai rice noodle salad
