Eggs can be so underrated. 

An Egg Sandwich is nutrious, delicious and quick and easy.

Egg Sandwiches are versilte and are a great breakfast, lunch or dinner. Think about it, how many times you wake up in the morning and think about eating something but always consider how simple and easy it is to boil an egg. 

I was recently inspired by a Tiktoker who made their version of the smashed egg sandwich and it has quickly become one of my favorite things to eat. It's so simple, yet so delicious. All you need is a boiled egg, some bread, and your favorite condiments. I like to add avocado, tomato, and hot sauce to mine sometimes.

If you're looking for a quick and easy meal that is also nutritious and delicious, I highly recommend giving the smashed egg sandwich a try. Trust me, you won't be disappointed.

If you're looking for a little extra protein, you can add bacon or ham to your egg sandwich.

If you're not a fan of avocado, you can use mayo or another type of spread in its place.

Egg sandwiches are not always a fan favourite but after you try my recipe you will reconsider . This is the perfect meal for on-the-go or when you're feeling lazy and don't want to cook. All you need is a boiled egg, some bread, and your favourite condiments literally that is it.

 The Recipe

Smashed Egg Sandwich

Prep time 15 min

Cook time 8 min

Serving: Serves 1 person

Ingredients:

2 boiled Eggs

6 inch baguette

5 slices Red onion

2Tbsp Mayo

3 Tbsp Honey mustard

2 Tbsp Butter

¼ cup Lettuce

2 Tbsp Dill pickle relish

1/8 tsp Salt

1/8 tsp Black Pepper

 

To get started start boiling  your eggs. You want to boil them for 8mins. This will ensure that your eggs are completely cooked and not dry and dusty. Who wants a dusty egg anyways LOL. After your eggs are finished throw of the boiling water and place them in cool water and set aside.

Wash and slice your lettuce into shreds or chiffon like pieces along with your red onion. You can put as much or as little red onion as you like. If you like a little bit of onion add 5 thin slices if you like more than add twice or 3 times as much. Create your own flavour profile.

While your eggs chill out in there cool water bath. Cut your baguette long way in half starting from the right side of the baguette through the center to the left and add as much or as little butter as you want on both inside pieces of your bread. You basically want to butter this just like how you would butter your toast in the morning.  Then toast your baguette in a frying pan on medium heat or just use a toaster oven.  Both methods will allow your baguette to toast evenly and maybe get some charred corners for a bit of extra flavour.  While your bread is toasting you can start prepping your eggs.

At this point your eggs should be slightly warm and fresh. Peel your eggs, making sure to strip away any shell that is attached and taking extra care to not have any shell attached. The worst is a crunchy egg sandwich via egg shell.

Check your Toast! If you have a hard time multi-tasking that’s fine. Peel your eggs before toasting your bread.

Next is the best part. Sandwich Assemble!!!

To both halves of the buttered baguette add mayo and then relish on both of the inside parts. Next take your boiled eggs one at a time and smash them down on the bottom half of the baguette. This is the part you season your eggs with a sprinkle of salt and pepper.

This part does not need to be perfect. You are going for free handed look.  Continue by adding your sliced lettuce, onions on top of the eggs and then drizzle honey mustard on top.

Serve and Enjoy!
